  • 1 lb Italian sausage (sweet or spicy – your call), casing removed

  • 1 Tbsp olive oil

  • 1 Small yellow onion, finely diced

  • 3 Cloves garlic, minced

  • tsp tsp kosher salt (or to taste)

  • ½ tsp freshly cracked black pepper

  • ¼ tsp red pepper flakes (optional, for a little heat)

  • 2 Tbsp tomato paste

  • 4 Cups chicken broth (homemade or low-sodium store-bought)

  • 2 Cups water

  • 9 oz fresh cheese tortellini (refrigerated, not frozen)

  • Cips baby spinach (loosely packed, stems removed)

  • ¾ Cup heavy cream

  • ¼ Cup freshly grated Parmesan, plus more for serving

  • Fresh parsley or basil, chopped (for garnish)

Directions

  • Brown the Sausage
    In a large soup pot or Dutch oven, heat olive oil over medium-high heat. Add sausage and break it up with a wooden spoon. Cook until browned and slightly crispy, about 6–8 minutes. Transfer to a paper-towel-lined plate. Leave a bit of the fat in the pot for flavor.
